It's a phrase Dave has taken seriously since opening Polo Nuts & Candy Etc. here in 1985 — over 400 varieties of nuts, candies, ice cream, popped corn and gift trays. By 1990, he'd turned his focus to Polo Café and Catering, Bridgeport U.S.A.

The Polo Timeline
The corner opens as a candy shop, with 400+ varieties of sweets and the first hand-tied gift trays.
Dave turns his focus to the kitchen — brunches, lunches, dinners and catered productions across Chicago.
The 1914 Eagle Theater next door reopens as an elegant banquet hall for up to 100 guests.
A handsome three-suite inn opens above the café — real Chicago hospitality, a mile from Sox park.
